Taleggio is a semi-soft, washed rind cheese that has a firm and creamy texture, pungent smell but a deep rounded flavour in the core that contrasts the spicier and pleasantly gritty texture of the thin rind.
It is perfect eaten on its own, on a cracker, with a salad, with tomato on a bruschetta or even melted into risotto or polenta.
