Caws Teifi, Llandysul, Wales
Saval is a rich and pungant unpasteurised milk cheese made using the local organic milk. Strong like Époisses, but without the bitter bite that is evident in the older, runnier version of the maturer version of the French cheese. Washed in cider, the flavour is deep and rich and lingering. The texture is firm, semi-hard, with a smattering of small holes, evidence of gaseous activity. We think one of the best 'smelly' cheeses out there.
