King Stone Dairy Rollright

King Stone Dairy, Chedworth, Gloucestershire

An outstanding cheese that has become a bit of a classic. Truly artisanal; hand-made using the milk of a single herd of cows from the farm that holds the dairy. It's a soft washed rind with an orange rind and white bloom bound by a spruce bark. A super creamy, unctuous core is mushroomy and autumnal forest mulch, the rind being nutty and even richer mushroom. Complex and grown-up but not too strong despite the appearance of being so.
