A full-bodied hard cheese with a dark red plastic coat rinded. The cheese is creamy/yellow, depending on Season of production. It is best be described as a British Territorial cheese, which lies somewhere between a Leicester and a Cheddar. Exceptional flavours most notably sweet caramel with nutty characteristics. Sweet and nutty to smell.
